Currently there are 21 different power discs to collect and use in the
Disney Infinity game. Between the 10 packs I bought and the 1 that came with the game, I ended up with 13 different ones.
Note that one is exclusive to Toys R Us (Mike's New Car) and only comes in the gold colored Toys R Us exclusive packs. Currently each of the Toys R Us exclusive packs has Mike and one random one from the other 20 in series 1. (Updated 11/10/13: Toys R Us discs now have own post

Updated 8/22/13: Bought 6 more packs and got 2 new ones: Buzz Lightyear Astro Blaster and Marlin's Reef.
Updated 8/23/13: Bought 9 more packs and now only missing Disc 2 and Disc 8, which I will probably try to wait and trade for at the September 7 Toys R Us trade event.

Below are a list of the series 1 power discs and screenshots of my experience with the ones I have.
Series 1
Disc 1 of 20 - Bolt's Super Strength: This disc gives in-game character a chance to do more damage.
Disc 2 of 20 - Fix It Felix's Repair Power: This disc gives in-game character a chance to fully restore health.
Disc 3 of 20 - C.H.R.O.M.E.'s Armor Shield: This disc gives in-game character a chance to gain a damage shield.
Disc 4 of 20 - Pieces of Eight: This disc gives in-game character a chance to receive more loot.
Disc 5 of 20 - Mickey's Car: This disc allows you to drive Mickey's Jalopy in the Toy Box mode.
Disc 6 of 20 - Cinderella's Coach: This disc allows you to drive Cinderella's Carriage in the Toy Box mode.
Disc 7 of 20 - Kahn: This disc allows you to ride Kahn the Horse from Mulan in the Toy Box mode.
Disc 8 of 20 - Stitch's Blaster: This disc gives your in-game character Stitch's blaster from Lilo and Stitch.
Disc 9 of 20 - Carl Fredricksen's Cane: This disc gives your in-game character Carl's cane from Up.
Disc 10 of 20 - King Candy's Dessert Toppings: This disc adds a Sugar Rush from Wreck-It Ralph theme to the Toy Box terrain objects.
Disc 11 of 20 - Sugar Rush Sky: This disc adds a Sugar Rush from Wreck-It Ralph theme to the Toy Box sky.
Disc 12 of 20 - Alice's Wonderland: This disc adds an Alice in Wonderland (animated film) theme to the Toy Box terrain objects.
Disc 13 of 20 - Tugley Woods: This disc adds an Alice in Wonderland (animated film) theme to the Toy Box sky.
Disc 14 of 20 - Marlin's Reef: This disc adds a Finding Nemo theme to the Toy Box terrain objects.
Disc 15 of 20 - Nemo's Seascape: This disc adds a Finding Nemo theme to the Toy Box sky.
Disc 16 of 20 - Rapunzel's Kingdom: This disc adds a Tangled theme to the Toy Box terrain objects.
This is the Rapunzel disc I have and it added the Birthday Sky to the Toy Box, which supposedly disc 17 does. Not sure if this is a glitch with my power disc or the images are wrong on the Disney site, but it would make sense that this disc is the birthday sky and the images are mixed up on the Disney website because the image on this disc does show the birthday sky. By the way, the birthday sky is my favorite sky by far. Update 8/23/12: Now that I have both Rapunzel discs, I can confirm that the Disney Infinity official site has the images and descriptions mixed up. I have the moved the disc images around to match the disc descriptions in this post.
Disc 17 of 20 - Rapunzel's Birthday Sky: This disc adds a Tangled theme to the Toy Box sky.
Disc 18 of 20 - Rare Disc 1 of 3 Dumbo: This disc allows you to ride Dumbo the flying elephant in Toy Box mode.
Disc 19 of 20 - Rare Disc 2 of 3 Buzz Lightyear Astro Blasters: This disc allows you to drive in the vehicle from the Buzz Lightyear Astro Blaster ride in Toy Box mode. When in the vehicle you can also use the blaster.
Disc 20 of 20 - Rare Disc 3 of 3 Abu: This unlocks Abu as an elephant to ride in Toy Box mode.
